Book on traditional Mexican cuisine presented

ZAPOPAN, Jalisco, May 19, 2023.- Professor Morena Pérez Montemayor, from the School of Institutions Administration (ESDAI) of the Universidad Panamericana Campus Guadalajara, presented her book "Traditional Mexican Cuisine".

The event was held at the University facilities, and it was Chef Maru Toledo, who made the honors of the presentation of the text, where she said "It is wonderful, hopefully people take it as a book that we should have at home very handy, even if we do not study gastronomy.

The work includes a research looking for the origin of dishes in Spanish recipe books from the XVI and XVII centuries and Mexican recipe books from the XVII to the XX century. The research was based on a compilation of recipes from the grandmothers or great-grandmothers of students of the ESDAI and members of the educational community. It is divided into Savory Dishes, Pastries and Breakfasts.

After searching the old recipes, the points of coincidence were analyzed based on cooking systems and common ingredients. Finally, a relation was made between the rescued recipes and the old ones to find similarities.

For "More", as he is also known at Panamericana, the idea of writing a book arose in 2017, supported by the educational community. "The option that worked for me was to do it in a personal way. Each ESDAI student was asked for her family recipe and to request another recipe from a student from another career or from the University staff".

Having started with the idea in 2017, for Morena Pérez, the biggest challenge in creating the book was "the search for recipes in recipe books, with the diversity of dishes it required consulting many sources."

Years later

Five years later, "Cocina Tradicional Mexicana" is a fact and for the teacher it represents an accomplishment to have transmitted the recipes of each family that participated. Secondly, it leaves her with the satisfaction of learning about the origin of Mexican cuisine and how the dishes have evolved, either by eliminating ingredients or by changing the cooking system.

The author shared that, throughout her writing process, she received guidance and accompaniment from Dr. Ana Gabriela Ramírez Gutierrez, Research Secretary at ESDAI. "I had support from the school management at all times."

Finally, a piece of advice that the professor gives to ESDAI students as well as to the university community, is "torescue family recipes, since they are part of their roots, of their heritage or family patrimony. If each family protects its cuisine, in the same way they help to protect the traditional Mexican cuisine".

Gastronomy

To close the presentation event, Dr. Friné Velázquez, Director of the School of Hospitality of the campus, said "It is wonderful, I am speechless (...) they transport us (Maru Toledo and Morena Pérez) through the senses, the memory, they make us relive memories through gastronomy".
