New fermentation laboratory

ZAPOPAN, Jalisco; April 21, 2023. -The Universidad Panamericana has inaugurated its new fermentation laboratory, which will be used by students in the School of Hospitality, primarily in the Fermentation Technologycourse.

The new laboratory has the necessary equipment to monitor and control fermentation processes. It supports quality testing and pilot testing for the development of products such as wines and certain spirits.

The facility is designed to support student research in life sciences and food production, allowing them to produce different types of fermented foods and beverages such as pickles, yogurt, kefir, kombucha, and various styles of beer.

Fermentation processes offer advantages for the food industry, such as the ability to manipulate variables that increase nutritional value and improve the organoleptic characteristics of foods by generating textures and aromas that are sometimes difficult to obtain using traditional technologies.

Healthy food research

High demand in the market for healthy, high-quality food products has led to research in recent years into the use of new raw materials in conjunction with the development of technological processes such as extrusion, cultured meat, and improvements in fermentation models for the production of alternative proteins.

The new facility is expected to promote research and innovation at the university and contribute to the development of new technologies in the field of fermentation, thereby maintaining the faculty's first place nationally and second place in Latin America in the QS WORLD UNIVERSITY RANKING.
