New fermentation laboratory

ZAPOPAN, Jalisco; April 21, 2023.- La Universidad Panamericana has inaugurated the new fermentation laboratory, which will be used by the students of the School of Hospitality, mainly in the Fermentation Technologycourse.

The new laboratory has the necessary equipment to monitor and control fermentation processes. It supports quality tests and pilot tests for the development of products such as wines and some distillates.

The facility is designed to support students' research in life sciences and food production and will enable them to make different types of fermented foods and beverages such as pickles, yogurt, kefir, kombucha and various styles of beers.

Fermentation processes provide advantages for food industries, such as the possibility of manipulating variables that provide nutritional enhancement and improve the organoleptic characteristics of foods by generating textures and aromas that are sometimes difficult to obtain with traditional technologies.

Health food research

The high market demand for healthy and high quality food products has led to research in recent years on the use of new raw materials in conjunction with the development of technological processes, such as extrusion, cultured meat, and improvements in fermentation models for the production of alternative proteins.

The new facility is expected to foster research and innovation at the university and contribute to the development of new technologies in the field of fermentation, thus maintaining the first place nationally and second place in Latin America in the faculty's QS WORLD UNIVERSITY RANKING.
