ESDAI guarantees food safety during LIV International Golf Tournament

Mexico City, May 29, 2025.— The ESDAI School of Hospitality at the Universidad Panamericana reaffirmed its academic and professional leadership by participating in the prestigious LIV International Golf Tournament, where it implemented a rigorous plan to ensure food safety and protect the health of players, staff, and attendees.

The tournament, held from April 24 to 27, is a highly prestigious event organized by an Arab consortium and logistically managed by the British company Tactical Events LTD.

Supervision and Training: Keys to Food Safety

Given the need to ensure the health of the participants, the organizers sought expert advice on food safety, based on previous experiences with disease outbreaks at similar events. That is how the company Performance 54, a company that organizes golf tournaments, contacted ESDAI to lead the food safety strategy.

The team consisted of Lorenza Alcocer, M.A., head of the Academy of Sciences and a specialist in food hygiene, and Laura Elena de la Parra, an ESDAI of ESDAI and a food safety consultant.

The operation included an inspection of 12 kitchens operated by three main vendors. In the days leading up to the tournament, the setup of the kitchens was supervised, and food handlers were trained using infographics on handwashing and vegetable sanitization.

Real-Time Strategies

Throughout the event, daily inspections were conducted during each meal service (breakfast and lunch) to verify hygiene in the food preparation and service areas, as well as compliance with storage and display temperatures. Daily temperature logs were maintained for refrigerators, freezers, and food items at the buffets.

One of the critical issues was the service in the player suites for players, where a food bar was set up. Due to the high temperatures, it was recommended that high-risk items such as fresh salads, cold cuts, and chopped fruit be removed and replaced with whole fruits.

In addition, it was recommended to limit the amounts displayed at the buffets and to restock them every 30 minutes to minimize exposure time. The proper use of ice beds was also monitored to maintain safe temperatures for cold foods.

At the end of each day, a detailed report of observations and control logsas part of our commitment to food safety.

This collaborative effort ensured the hygienic quality of the food service and protected the health of all attendees, reaffirming the role of academia as a strategic partner in high-level international events.
