French restaurants receive the Magno Hospitality Award

ZAPOPAN, Jalisco; November 22, 2023.- As has become a tradition, for the ninth time, the Escuela Superior de Administración School of Administration of Institutions (ESDAI) (ESDAI) of the Universidad Panamericana campus Guadalajara, held its annual dinner with the purpose of awarding the Magna Award for hospitality.

The art of Paris to the palate

The academic event is organized by the seventh semester students of the High Scale Food Service Management course. For them, the objective is to apply their knowledge in the organization of an event of this nature; for this year the celebration is called "The art of Paris to the palate".

ESDAI' s fifth and seventh semester students have evaluated 9 French restaurants and with this information, a selection of award winners has been made to give them recognition for their quality standards, which coincide with the values that the students are expected to live in their professional lives.

 

Magno Hospitality Award

The evening was about the different experiences in France, from the decoration that transmits a restaurant, the representative colors and the traditional dishes of the French culture, with the characteristic essence of the annual dinner.

Chef Antoine Dansac dedicated the following words to his students:

It shows a very well done research work. A lot of effort in presentation "bravo". The dessert had a perfect balance between the different flavors and textures.

ESDAI Dinner Menu

The menu, which was designed by the students, consisted of the following dishes: a snail croquette with garlic choux foam with creamy foie gras and duxelle; beet salad, dried fruit granola and tarragon vinaigrette; a shrimp bisque; a champagne granita; a lamb sous vide with red wine reduction, pumpkin puree and vegetables; a crème brûlée tatin with cardamom ice cream; for dessert, assorted macarons, lotus with coffee, pear in red wine, pistachio and passion fruit.

The celebration was attended by government, academic and business authorities, including Dr. José Antonio Esquivás, rector of Universidad Panamericana; Dr. Sergio Velázquez Rodríguez, vice rector; Dr. Rafael Hernández Cazares, director of institutional development of our campus; and Dr. Friné Velázquez Contreras, director of ESDAI.

Vanessa Pérez Lamas, Secretary of Tourism of Jalisco; Gustavo Staufert Buclon, Director of the Guadalajara Convention and Visitors Bureau; and Juan Carlos Mondragón, President of the Jalisco Hotel Association.

The student Andrea Ruiz Velasco shared that "The dinner leaves me totally satisfied. It has been a great challenge becauseit was months of planning and hard work that led to moments of stress and anguish, but undoubtedly the new knowledge and positive experiences that we took with us were more important".

For her part, student Ana Paula Silva Sanchez said that "Being part of the ESDAI dinner has been an incredible experience.Being part of the ESDAI dinner has been an incredible experience.. Although I had already participated in other dinners as part of the service,it is very different to be part of the planning and realize that you are actually putting into practice a lot of knowledge that we have acquired throughout the career".

The Universidad Panamericana congratulates the students for their dedication in this great experience, as a result of the great learning about the professionalization of the hospitality industry and the gastronomic technique, which reflects the preparation received by the School of Institutional Management.
