Dr. Julieta Domínguez Soberanes, a research professor at Universidad Panamericana’s Aguascalientes campus, was selected to participate in the international program Sustainable Food Systems: Resource Efficiency, Food Loss and Food Waste, organized by the University of Copenhagen in collaboration with the Danish International Development Agency (DANIDA).
Transforming the Future of Food
As an expert in agri-food and sustainable development, Dr. Domínguez received a scholarship to participate in this prestigious program focused on food system efficiency, food loss reduction, and waste prevention.
“This experience was highly important for my professional development. I updated my knowledge on sustainability, considering that Denmark is one of the leading countries in promoting this movement and societal change towards economic sustainability,” she stated.

The course, coordinated by experts Henning Otte Hansen and Thomas Laage-Thomsen, addressed crucial global food system issues: resource efficiency, food loss reduction, and waste prevention.
The program included visits to sustainability-leading companies such as Danish Crown, Arla Foods, Solrød Biogas Plant, and SEGES, where she observed responsible production models and innovative technology firsthand.
“I had the opportunity to learn how different production systems operate, such as incineration processes and energy generation through biogas. The experience was extremely enriching,” she added.

UP Represented at International Sustainability Forums
A highlight of the program was Dr. Domínguez’s participation in a congress at the University of Copenhagen, where she presented cases from Mexico in support of sustainability.
“An example is the Mexican Pork Institute, which is implementing production chain strategies, particularly ideas to ensure full use of every product to achieve zero food waste and improve nutrition,” she explained.
She also deepened her knowledge in sustainable value chains and learned to design solutions with positive environmental and food security impacts.
During the event, she collaborated with representatives from companies like Unilever and Danish government officials, exploring potential synergies between Mexico and Denmark in agricultural innovation and food security.
